Secret Ingredient Chocolate Cake

If you are looking for a chocolate cake recipe that will feed a crowd AND that has a secret ingredient to make that cake moist and fluffy you've just got to try Grandma Katie's Chocolate Cake recipe. I think this would be a perfect recipe for a family reunion, for your wedding reception, at the church social, any function that's expecting a crowd.

Grandma Katie's Chocolate Cake

Ingredients:
  • 2 lbs, 8oz butter
  • 4 lbs sugar
  • 1 1/2 T salt
  • 2 T vanilla
  • 6 lbs (3 quarts) mashed potatoes --->secret ingredient
  • 16 eggs
  • 2 lbs, 8 oz flour
  • 2 1/2 cups cocoa powder
  • 5 oz (1 cup less 2 T) baking powder
  • 1 cup milk
Method:
In a large mixing bowl cream butter, sugar, salt and vanilla. Add lukewarm potatoes and cream until smooth. Blend  in eggs. Sift together flour, cocoa and baking powder. Add alternately with milk to the potato mixture. Mix only until smooth, batter will be thick. Spread in two lightly greased sheet pans (16x25x1). Bake at 350 degrees (moderate oven) for about 35 minutes. Once cooled dust with powdered sugar or frost each of the cakes. Serves 100 - portion size 2 1/2' x 3".

Romancing Your Poached Egg

Blackstone EggsRomancing your food takes a few extra steps well worth the final taste experience.  Sure enough a poached egg or two on buttery toast is a great breakfast, why not add a little bit of love, unique ingredients, take your poached eggs to new heights! Bon Appetite egg lovers ;)

Saute then mince three slices of bacon; set aside. Reserve drippings. Cut six slices of tomato 1/2" thick. Season with salt and pepper, dip in flour and saute the tomato slices in the bacon drippings until golden brown. Place one tomato slice per plate, sprinkle with bacon, top with a poached egg. Now this is the romancing part...drizzle with Hollandaise sauce, sprinkle with chopped parsley.

Tips:
  • Place this recipe atop a toasted, lightly buttered English muffin.
  • Put a hooker of Hollandaise sauce on the side
  • Make a side dish of fruit compote or salad to compliment the Blackstone Eggs
  • Consider this recipe for lunch or dinner
  • Whisk in 1-2 teaspoons of Dijon or brown mustard into Hollandaise sauce

Note in Grandma Katie's journal - Sat. Oct 4th - 1st time. Evidently this recipe was delicious enough that Grandma made a note about the first time she tried this recipe.
